INGREDIENTS
- 2 cups quick oats
- 2 cups cottage cheese, 1%
- 8 large eggs
- 2 tsp baking powder
- 2 tsp vanilla extract (optional)
DIRECTIONS
- Place all ingredients in blender or food processor and blend until smooth. Let sit for 10 minutes
- Heat a large non-stick skillet or griddle over medium-high heat. Add pancake batter to skillet or griddle. Cook for about 3-4 minutes or until tiny bubbles form on the top of the pancake. Flip and cook another 2-4 minutes until batter is cooked through.
Tip: May serve topped with Greek yogurt, berries and chopped nuts.
